After years of collaboration with restaurants of the great chef Gualtiero Marchesi, Giusto Manetti Battiloro begins 2021 by announcing a multi-year agreement with Fondazione Gualtiero Marchesi. The partnership aims to promote the culture of goodness and beauty through the use of gold leaf in haute cuisine.
As of January 1st Giusto Manetti is officially a supporting member of the Foundation which was established to pursue research into gastronomy, a veritable applied art, and into eating, interpreted as a cultural act which combines memory and innovation.
The agreement also provides significant support for the training of young and talented chefs who thanks to a scholarship funded by Manetti, will be able to attend courses at the prestigious Accademia Gualtiero Marchesi and create an iconic dish each year, decorated with edible gold leaf.
In order to celebrate forty years of the famous “gold and saffron risotto”, with which Gualtiero Marchesi relaunched the use of gold in cuisine at an international level, Manetti will participate alongside the Foundation in a rich calendar of events scheduled for 2021, in Italy and abroad.
Niccolò Manetti explains: “We are especially proud of this alliance because it is a mutual recognition of a long path of research into beauty and quality without compromise. Without the ideal guidance of Gualtiero Marchesi, the world of catering would never have acquired a true awareness of the importance of the aesthetic experience in the composition of a dish; we probably would never have expanded our traditional business with the Gold Chef edible gold line. We are grateful to the general secretary of the Foundation, Enrico Dandolo, for rewarding our commitment to producing gold and silver that are not just edible, like those of many food producers, but veritable food products which comply with the most stringent purity, safety and reliability regulations.
